Cheddar cheese originated in Somerset, England in the 12th century, and the earliest written records of it date back to 1170. The name comes from Cheddar Gorge and the market town of Cheddar, where cheeses were once aged in natural caves. While cheddar is now made internatioanlly West Country Farmhouse Cheddar is a protected and rustic process.
