The Artisan Soft Cheeses:
Baron Bigod is a British Brie de Meaux style cheese made in the UK. An unctuous cheese, the taste is complex and beautifully balanced. Traditional Artisan Brie flavours, incredibly rich creamy butter notes while the earthy button mushrooms remain prominent, as well as sublte but characteruful hints pan-roasted parsnips.
Created by the talented team at Hampshire Cheese, Winslade has a full, creamy and mushroomy flavour with resinous notes from the spruce bark. Runny like a Mont d’Or this ‘Best New Cheese’ award winner is sure to prove popular on any cheeseboard
Yarlington is skilfully washed in the finest British cider, made by one of the world’s most influential cider makers – Tom Oliver. The Cider is matured in Speyside whisky oak barrels for 18 months making it equally fruity, smokey, spicy, with a gentle bittersweet finish. As the cheese ages, the cider wash comes to the fore, supplying notes of green apple skins and a little Oakwood smokiness
Sinodun Hill is a ripened goats’ cheese pyramid, similar in style to a Pouligny and other French goats’ cheeses. Sinodun is made using the traditional method of slow lactic coagulation and is then matured for up to 21 days to develop the flavour and texture. The result is a more flavoursome cheese with mellow citrus notes, light nutty edge, and a smooth mousse-like texture.
