This cider, aged for 18 months in Speyside whisky oak barrels, brings a balance of fruity, smoky, and spicy flavors with a smooth, bittersweet finish. As the cheese matures, the cider wash shines through, offering hints of green apple skin and a touch of oak smokiness. It’s a wonderfully complex and delicious cheese, created by David Jowett.

Old Winchester: is a truly majestic cheese, showcasing a rich amber hue just beneath the rind that fades into a lighter honey tone. Aged for 18 months, this hard cheese delights the palate with complex flavors and an irresistible crunch. Speckled with white tyrosine crystals—a sign of its well-aged character—Old Winchester is perfect for any cheese board and also makes an excellent, vegetarian-friendly British alternative to Parmesan.

Pave Cobble: Crafted by White Lake Cheese in Somerset, Pavé Cobble is a lactic-style ewe’s milk cheese. It opens with a sweet, creamy flavor, followed by a mild tang and a hint of lemon on the finish. Distinguished by its unique truncated pyramid shape, it’s rolled in ash, beginning with a delicate, wrinkled silver-grey rind that deepens to a natural mold with shades of green and blue as it matures.
